APPLE-CARROT CRUNCH

This recipe is truly one of my favourite breakfasts (it’s also great as a snack)! I love the crispy freshness of the raw fruit/veg, the crunchiness of the seeds, nuts and coconut, and the creaminess of the yoghurt. Best of all, you only have to make up the crunch mix once and you get 5 to 10 meals out of that. All you have to do is grate 1 apple and 1 small carrot, throw a few tablespoons of the crunch mix and a tablespoon or two of yoghurt and a handful of berries and you’re good to go. Couldn’t be simpler than that!

Preparation Time: 6 minutes

Ingredients

CRUNCH MIX (store this in a jar and just use 2 – 4 heaped tablespoons each serve)

  • 80g Linseeds
  • 40g Pumpkin seeds
  • 3 tablespoons sesame seeds
  • 100g almonds, roughly chopped
  • 90g shredded coconut
  • 40g Cacao Nibs (optional)
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla powder (optional)

 APPLE-CARROT MIX

  • 1 green apple, cored and grated
  • 1 small carrot, peeled and grated
  • small handful of berries (optional)
  • couple tablespoons of plain yoghurt

Method

  1. In a jar with screw on lid fill crunch mix ingredients and shake to mix.
  2. In a bowl place all Apple-Carrot Mix ingredients except yoghurt and toss mixing around evenly.
  3. Add two to four tablespoons of the Crunch mix and mix again.
  4. Add yoghurt and mix. Serve.
